Realizarea unui cozonac perfect necesită atenție la detalii și o îngrijită selecție a ingredientelor. Rețeta tradițională, transmisă din generație în generație, este un adevărat tezaur culinar ce trebuie păstrat cu sfințenie.

Cum să pregătiți aluatul perfect
Fiecare ingredient contează în realizarea unui aluat fin și pufos. Făina cernută de trei ori, laptele călduț și drojdia proaspătă sau uscată sunt elementele de bază pentru un aluat reușit.
Nu uitați de adaosul de zahăr, ouă, ulei și esențe, care completează gustul și aroma delicioasă a cozonacului.
Rețeta tradițională pentru cozonac pufos cu nucă
Ingrediente pentru aluat:
- 1 kg de făină 000
- 50 g drojdie proaspătă sau 14 g drojdie uscată
- 350 ml (max. 400 ml) lapte călduț
- 250 g zahăr
- 4 ouă
- 150 ml ulei sau 100 ml ulei și 100 g unt topit
- 3 plicuri zahăr vanilat sau două lingurițe extract sau miezul de la o păstaie de vanilie
- Coajă rasă de la 2 lămâi și o portocală
- 15 g sare
Mod de preparare:
- Se cerne făina de trei ori, după care se face „o groapă” în mijlocul vasului în care este pusă, fără a ajunge însă la fund.
- Se încălzește laptele împreună cu zahărul și zahărul vanilat, până când zahărul se topește, dar fără a-l lăsa să fiarbă.
- Se adaugă drojdia peste laptele călduț și se lasă 10 minute.
- Separat, se freacă gălbenușurile cu sarea și coaja de lămâie, apoi se adaugă în vasul cu făină.
- Se adaugă și restul de lapte și se amestecă bine până la omogenizare.
- Se toarnă uleiul în fir subțire și se frământă timp de 30 de minute, până când aluatul devine elastic.
- Se acoperă vasul și se lasă aluatul să crească la căldură.

Umplutura de nucă, îmbogățită cu rahat colorat, este sufletul cozonacului pufos. Combinând gustul bogat al nucilor cu dulceața rahatului și intensitatea cacaoului, veți obține o umplutură savuroasă, care va transforma fiecare felie într-o experiență gustativă de neuitat.
Împăturirea și coacerea – cheia succesului
Odată pregătit și umplut, aluatul trebuie împăturit și modelat cu grijă pentru a-i da forma caracteristică cozonacului. Puneți-l cu atenție și lăsați-l să crească într-un loc călduț pentru a se dezvolta perfect.
Coacerea la foc mediu spre mare timp de aproximativ o oră va garanta o coajă aurie și un miez pufos și bine copt.
